Let's get cooking: Annie's Satay Chicken Curry!

At Girls Club, we always try to incorporate food into our sessions, and where possible to try something new! With all of this extra time on my hands, I thought it was a good idea to get back into my own kitchen and experiment with some of my favourite flavours. I LOVE peanut butter and when ordering takeaway, satay chicken is one of my go-tos for a movie night in with my friends. I decided to try and have a go at making my own Satay Chicken Curry – feel free to give it a go too!

PS – for my veggie/vegan friends, you can definitely take out the chicken to make it equally as delicious!

You will need…

·      4 x chicken breasts

·      1 x onion

·      1 x pack of green beans

·      2 x peppers (any colour of choice!) 

·      1 x tin of chopped tomatoes or passata, depending on preference

·      3 x tablespoons of peanut butter (smooth or crunchy will work depending on preference!) 

·      1 x red chilli 

·      2 x tablespoons of milk 

·      Handful of broccoli florets (optional) 

·      Spices of your choice

 Method…

·      Pan-fry the chicken until all pink has disappeared from the meat, then add all of your vegetables (including the chilli!) together, cooking until the peppers have softened and the onions are crisping up!

·      Add your chopped tomatoes, and then fill the tin halfway with water and add this water to the pan

·      Stir on medium heat to allow mixture to thicken. Add the milk and spices and stir again!

·      Add your peanut butter, 1 tablespoon at a time, stirring into the mixture until it has disappeared

·      Allow mixture to thicken to desired texture. Serve with rice, breads or crisps (whatever you’ve got in your cupboards!)
